Fan Favorite Gluten-Free Chocolate Chip Cookies {Recipe}

Everytime I make these cookies for people…. they don’t last long!

They are gluten free, dairy free, and vegan. And since they’re made with almond flour, they’re basically healthy, right?!

The Recipe:

Ingredients:

2.5 cups blanched almond flour
½ teaspoon salt (I use pink himalayan)
½ teaspoon baking soda
½ cup grapeseed oil
½ cup maple syrup (or agave nectar)
1 tablespoon vanilla extract
1 cup vegan dark chocolate chips

Directions:

I find that baked goods come out best by mixing all the dry ingredients together first in a separate bowl, mixing the liquid ingredients, and then combining them.

After mixing all ingredients together, refrigerate the dough for about 20 minutes. In the meantime, prepare two baking pans with parchment paper and preheat the oven to 350℉.

Once the dough has been refrigerated for 20 minutes, scoop out a heaping tablespoon for each cookie onto the baking sheet and flatten the bookie dough ball with your hand. Leave an inch or so between cookies.

Bake for 7-10 minutes, until the edges are lightly golden.

Here in Colorado, I bake these cookies for the full 10 minutes and they are perfect.
